Easy (Meatless) Burrito Bowls

Let me begin by saying that I love meat. I understand why some people choose to be vegetarian, but I personally need meat in my life. However, sometimes I need something light and healthy that doesn’t feature meat. That being said, I present one of my family’s new favorite meals. The Meatless Burrito Bowl.

This is an easy and relatively healthy dinner that takes almost no time to prep and put together. An added bonus is that it only costs about $20 to feed 4 people (I accidentally said that it costs more like $25 to make in the video. OOPS). Obviously you can make this for even less if you ditch the cheese and maybe make your own salsa and rice. I paid a little extra for convenience, but $20 to feed a family of four these days is definitely on the cheaper side, especially for a healthier dish.

Here’s what you’ll need:

2 pouches ready rice (or 90 second rice)

2 small avocados

1 1/2 cups chopped romaine lettuce

1/2 cup finely chopped cilantro

1 lime, cut into wedges

1/2 cup chipotle aeoli

1/2 cup of sour cream

1 cup shredded cheese (I used a Mexican blend)

Black bean and corn salsa

All you have to do is cook the rice as directed. Prep all your produce. Mix together your sauce (chipotle aeoli and sour cream) and add everything together in individual bowls with a squeeze of lime and sprinkle of cilantro. Disney Subscription Box

I have been on a subscription box kick lately and I’ve ordered a couple boxes that should get to me soonish. I’m a little sad because I just found the one that I think is going to trump all the others that I have coming to me (meaning I wish I’d just gotten this one instead of the other ones, but oh well!)

It’s called the Magic at Your Door subscription box and it’s full of officially licensed Disney goodies. I CAN’T WAIT TO GET THIS THING. I’ve been watching videos of people un-boxing these and every one of them is amazing. The best part about these boxes is how much you can customize them. You’re getting a bunch of things that you actually want, rather than a couple of cool items mixed with lame items. You select the things you want, sizes of clothes, colors you like, the characters you love best, and more importantly the things you don’t want them to add to your box. You really get your moneys worth it sounds like.

I’ve done the Kawaii Box a few times (just ordered another one recently, but will likely cancel my subscription once my box arrives), and I’ve got one Yume Twins box coming, but all of these seem like they’ll pale in comparison to this Disney box. Granted, this box comes at a significantly higher price tag ($89, versus the much cheaper Kawaii box at only $19 or the Yume Twins box at $35), but you’re getting quality products for the price and no cheap, ugly filler items tossed in just to fill space. There are also a couple of promo codes for the MAYD box. The one I was able to use is DM10 for $10 off of my first box, so give that a try!

In short, I am very excited about getting my first Magic at Your Door box. Fingers crossed for a pair of cute Minnie Mouse ears (I think all of the MAYD boxes come with a pair if it’s part of your preferences)! I still don’t own any and I’m a HUGE Disney fan. Shameful.

Blue Hair and Fourth of July Fun!

I made a big decision recently. That decision was that I was going to dye my hair a fun color for once. No more boring blonde.

I made the mistake of underestimating how much color I needed to cover my whole head, and the beauty supply shop was closed! Thankfully I had some leftover blue hair color from when I did a tiny strip of blue in my bangs a year or so ago,so I have two shades of blue in my hair, but I’m actually liking how it turned out.

This year has been a little different for us because we’re usually in Pagosa Springs camping for the fourth of July. We thought we’d try to change things up and go later this year. Instead of going out and fighting the crowds to see a fireworks display, we opted to stay home and enjoy good food and time with the family.
